Morello cherry, white chocolate chip and orange cookies
This is my take on honey&co’s cookies from their book “At home” recipe also available online at Financial Times website.
I found dried Turkish morello cherries last week in supermarket and decided to give these cookies an other try. I made them once before when we were climbing snowdon as a snack.
I reduced the sugar a lot but I think there’s still scope to reduce it more. I am planning to make an other version for me sweetened with dates or xylitol and using dark chocolate, I will post when I try.
Morello cherry, white chocolate chip and orange cookies
Ingredients
55 gr caster sugar
55 gr soft brown sugar
125 gr butter at room temperature
Zest of 1 orange
1 egg
180 gr white self raising flour
100 gr wholemeal self raising flour
Pinch of salt
125 gr dried morello cherries
150 gr white chocolate chips
Method
1. Cream the butter, sugar and orange zest in the bowl of stand mixer with the paddle attachment 2 minutes medium speed.
2. Add the egg and continue to mix until combined.
3. Add flours, salt, morello cherries and chocolate chips and mix until the dough comes together.
4. Divide dough into to 50-60 gr pieces and shape into balls.
5. Freeze for at least an hour.
6. Preheat the oven to 180° fan.
7. Bake in 180° fan oven 10 minutes, turn the tray over and bake for further 8 minutes.
