This is great when you have a cold coming on and feel the urge to eat hottest food. But personally I prefer the aubergines and courgettes fried without the spices that’s the Turkish in me, need to ve able to taste the vegetables on their own not covered with all the spice. This one is definitely a keeper, recipe is from Jerusalem cookbook but also available online here. I have replaced red wine vinegar with cider vinegar and it worked out well. I will be tryong this with salmon or mackerel next so it is packed with omega 3 as well.
