Spring Onion & Herb Fritters

If you’re looking for a delicious way to use up a bunch of spring onions, these Spring Onion & Herb Fritters are just the thing. Inspired by Turkish vegetarian cooking, this easy recipe is packed with fresh herbs and warming spices—and comes together in no time.


I recently found a few bunches of spring onions in the fridge that were begging to be used. They reminded me of the spring onion and herb fritters I made last year, a dish I couldn’t stop thinking about. This time, I doubled down on the spring onions to make them the real star of the show.


The recipe is adapted from Özlem Warren’s gorgeous cookbook Sebze, which highlights the richness of Turkish vegetable-based cuisine. You can also find a version of this recipe published online by Olive Magazine.


What I love most about these fritters is their flexibility. They’re filled with chopped parsley, fresh mint, crumbled feta, and gently spiced with cumin and pul biber (Aleppo pepper). The mixture is held together with eggs and a touch of flour, then shallow-fried until golden and crisp.


These Turkish-style herb fritters are perfect served warm or at room temperature with a spoonful of thick yogurt on the side. Whether you’re after a quick lunch, a light dinner, or a mezze-style snack, they’re guaranteed to satisfy.


Spring Onion and Herb Fritters


100g chopped spring onions (white and green parts from 2–3 bunches)

80g parsley, finely chopped

Leaves from a 50g bunch of mint

3 whole eggs + 2 egg yolks

65g plain flour

1 teaspoon ground cumin

1 teaspoon pul biber (Aleppo pepper)

½ teaspoon salt

¼ teaspoon black pepper

75g feta, crumbled


Method:

  1. Mix all ingredients in a large bowl until well combined.

  2. Add 2–3 cm sunflower oil to a frying pan and heat over medium heat.

  3. Spoon the mixture into the pan in small mounds and flatten slightly. Fry for a few minutes on each side until golden and cooked through.


Serve warm or at room temperature with a spoonful of yogurt on the side.
