Date & cinnamon wholemeal waffles


Here’s recipe for a wholemeal waffle sweetened with dates that’s passed my blood glucose test.


Ingredients


4 dates roughly chopped

1 cup milk hot

1 tablespoon coconut oil

1 cup self raising wholemeal flour

1 teaspoon baking powder

1 teaspoon cinnamon

Pinch of salt

1 egg


Dark chocolate to serve


Method


  1. Place the dates in a bowl, add the hot milk and let it soak for 10 minutes.

  2. Strain the dates, keep the milk on side.

  3. Put strained dates and coconut oil in a food processor and process until well chopped and blended. Slowly add the milk to the processor and process for 30 seconds.

  4. Put the flour, baking powder, cinnamon and salt in a bowl. Mix all and make a well in the centre, pour in the milk & date mixture and the egg. Whisk together, starting in the middle, to create a smooth batter.

  5. Use a ladle to pour the batter into your waffle maker and cook Until the waffle maker stops steaming.

  6. Melt the chocolate in microwave or a small bowl nested on a pan of simmering water.

  7. Serve waffles drizzled with melted chocolate.
