BAO-Inspired Peanut Milk with a Slow Juicer

I’ve loved BAO’s Peanut Milk since first trying it in London. Inspired by the Taiwanese drink Mee Jiang, it’s creamy, nutty and gently sweet.

When I was gifted a Hurom H330 Slow Juicer and a friend mentioned that she regularly uses hers to make nut milks, this was immediately the recipe I wanted to try.

BAO shared their Peanut Milk recipe on Instagram, but I adapted their method slightly. Instead of cooking the peanuts in the milk and straining everything afterwards, I soaked roasted peanuts and used the slow juicer to extract fresh roasted peanut milk first. It worked beautifully and made the process incredibly easy.


This version makes approximately 1 litre, enough for 4 servings.


Ingredients


250 g roasted, unsalted peanuts

240 ml cold water, plus extra for soaking

540 ml oat milk

200 ml oat cream

50 g dark muscovado sugar

1 vanilla pod


Ice, to serve


Method


1. Place the roasted peanuts in a bowl, cover generously with cold water and leave to soak for 4–6 hours.


2. Drain and rinse the peanuts, discarding the soaking water.


3. Using the fine strainer in your slow juicer, gradually feed the soaked peanuts through with the 240 ml fresh water, adding a little of each at a time. Collect the freshly extracted peanut milk.


4. Pour the peanut milk into a saucepan and add the oat milk, oat cream and muscovado sugar.


5. Split the vanilla pod lengthways and scrape out the seeds. Add both the seeds and the pod to the saucepan.


6. Bring everything gently up to temperature, then cook over a very low heat for 45–60 minutes, stirring regularly, until creamy and slightly reduced. Don’t allow it to boil vigorously.


7. Remove the vanilla pod and leave the Peanut Milk to cool completely before refrigerating.


8. Once thoroughly chilled, give it a good stir and pour into glasses filled generously with ice.


Makes approximately 1 litre / serves 4.
