We had our family visiting us for Christmas this year. As our visitors are living in France we had two Christmas dinners this year. This one is the French one and was on Chritsmas eve. As we had the Turkey for Christmas dinner I decided to go with venison for Christmas eve. Had to phone of couple of buthers until I find the venison loin though. We had Venison wellington with root vegetable and mustard mash. I used parsnips and celeriac on the mash and this was my first time cooking with venison and also first time making a wellington. Spinach and feta cheese quiche

Here is an other recipe using spinach. Ingredients; For the Pastry 280gr plain white flour 140gr cold butter, cubed 8 tablespoon cold water For the filling 250gr baby leave spinach, chopped 150ml skimmed milk 2 eggs 200 gr feta cheese, crumbled 1. Tip the flour and butter into a bowl and rub the butter until the mixture looks like breadcrumbs. Add 8 tablespoon of cold water and bring everything together until just combined. Mature spinach with rice, carrots and tomatoes

Meet the "Mature Spinach", this is the spinach we get from our farmers market and it is different from the baby leaf spinach that you find in the supermarkets. It is definately more work, I rinse it 3 times to get rid of the grit. But it is worth all the effort, the flavour and the texture is much better. Here is what I do with "Mature Spinach". Poached egg with chorize, potato and tomato

On Saturday afternoon I made this poached egg with chorizo, tomato, chilli and potato dish using the ingredients we had in the fridge. I fried the potatoes as we were so hungry and could not wait to boil them. It would be lighter and healthier if the potatoes are boiled.
