This is a salad of chopped vegetables mixed with walnut and pomegranate molasses, originated from Gaziantep.
Salad is only as good as the tomatoes and pomegranate molasses that goes in it. Make sure you have the ripest, juiciest tomatoes and best quality pomegranate molasses.
It’s a great meze with Raki along with a piece of lavash, butter & cheese.
4 tomatoes 1/2cm diced
1 banana shallot or small onion finely diced
1 Turkish long green chilli (sivri biber) or a green chilli finely sliced
1 spring onion finely sliced
Handful of walnuts crushed roughly in a pestle & mortar (reserve a teaspoon for topping)
1 tablespoon pomegranate molasses
3 tablespoons extra virgin olive oil
Parsley chopped finely
1 tablespoon sumac
Mixed all the vegetables in a bowl.
Add the olive oil, salt and pomegranate molasses and mix everything.
Top with the parsley, walnuts and sumac.
